Ingredients (for 6 servings):
half a kilo of beans
10 green onions
a bunch of parsley
150 grams of olive oil
salt, pepper, lemon juice
Pick through, wash, and put the beans in a pot of cold water on the fire to boil. Stir often an add cold water if needed. Once they have boiled and you are sure they are done, remove the pot from the stove and strain them. But BE CAREFUL! They should not thicken.
While the beans are boiling, clean, wash, and finely chop the green onions and the parsley. If you do not have green onions, you can use 1 or 2 dry onions.
Add the boiled beans to a small bowl together with the finely chopped onions and parsley, the olive oil, oregano, salt and lemon juice. Mix them together well and our salad is ready.
It is served warm.
Do not salt somebody else's beans.
